Type: Dinner | One-Pan | Pasta
Ingredients
- 6 oz bacon
- 1 yellow onion, diced
- 2 cups chicken broth
- ½ lb pasta
- ¼ lb fresh spinach (about 4 cups)
- ⅓ cup grated Parmesan
Optional Add-In Sun-dried tomatoes (highly recommended)
Instructions
- Cut bacon into 1-inch pieces.
- In a large skillet, cook bacon over medium heat until browned and crispy.
Remove with a slotted spoon and set aside. - Carefully drain most of the bacon fat, leaving about 1 Tbsp in the skillet.
- Add diced onion and cook until soft and translucent.
Let the onions help lift all those browned bits from the pan (that’s flavor). - Pour in chicken broth and scrape up any remaining bits from the bottom.
- Add uncooked pasta directly into the skillet.
- Cover and bring to a boil.
- Once boiling, reduce heat to low and simmer for about 9 minutes, stirring occasionally so pasta doesn’t stick.
- When pasta is tender and most liquid is absorbed (a little saucy liquid is perfect), add spinach.
- Stir until spinach wilts.
- Turn off heat, add bacon back in, and sprinkle Parmesan over the top.
Stir to combine and serve.
Tips
- Don’t overcook the pasta! it should still have a little bite ( 9 Min cook time on average)
- The leftover broth creates a light, creamy sauce.
- Sun-dried tomatoes add a really good depth of flavor.
- Use freshly grated Parmesan for best results.
Serving Ideas
- Serve with garlic bread and a side salad
- Add grilled chicken if you want extra protein
Storage
- Store in fridge up to 3 days
- Reheat with a splash of broth to bring it back to life
